Cinnamon Delicata Squash

In today's cooking corner, chef Barb Kleyman of the Giant Eagle Market District store in Shadyside cooks some fall favorites.


Serves: 4
Prep time: 5 minutes
Cooking time:  7 minutes

2 large Delicata squash, halved lengthwise seeds removed
1 ½ tsp ground cinnamon
3 T granulated sugar
¼ cup water

Wash squash well.  The skin on a Delicata Squash is edible.
Cut squash in half and scoop out seeds.
Mix sugar and cinnamon and set aside.

Place squash cut side up in microwavable dish.  Sprinkle with cinnamon and
sugar.  Pour water into container.  Cover tightly and microwave for 7 minutes
until done.  Serve whole or slice and serve.
