Recipe From Soba Chef Brandy Stewart

(KDKA) Chef Brandy Stewart, of Soba Lounge, is cooking up a tasty recipe for Flash Cooked Tuna.

Flash Cooked Tuna

4 oz sushi grade tuna
1 Tbs olive oil
1 tsp grated garlic
1 tsp grated ginger
3 asparagus spears, blanched
1 scallion, blanched
1 tsp sesame oil
3 tsp soy oil
½ lime
Sea salt


1. combine oil garlic and ginger and marinate tuna for about ½ hour. When done marinating, slice thin.

2. place asparagus and scallion on plate, season with salt and squeeze lime over. Place sliced tuna on top of vegetables and season with salt.

3. combine sesame and soy oils. Heat a small saute pan on high heat. When extremely hot, add oil mix, heat until smoking. When heated, carefully spoon hot oil over tuna.
