Weight Watchers Shrimp Dishes (6/23)

If you love seafood but are worried about watching your weight, you'll want to give these shrimp dishes a try from Weight Watchers!
GREEK SHRIMP WITH ORZO

There's something for everyone in this hearty Greek dish: pasta, vegetables and cheese. The shrimp adds protein as well as great flavor to round out the meal.

Ingredients:
12 oz uncooked orzo
2 tsp olive oil
1/2 cup onion(s), chopped
1 medium green pepper(s), chopped
2 medium garlic clove(s), minced
28 oz canned diced tomatoes
1 tsp dried oregano
1 pound shrimp, medium-size, peeled and deveined
1/4 cup basil, fresh, chopped
2 Tbsp feta cheese, crumbled
Instructions:
Cook orzo in salted water according to package directions without added fat; drain and set aside.
Meanwhile, heat oil in a large saucepan over medium heat. Add onion, pepper and garlic; cook until soft, stirring occasionally, about 3 minutes. Add tomatoes and oregano; bring to a simmer. Add shrimp and cook until shrimp are bright pink and cooked through, about 5 minutes.
Spoon cooked orzo into shrimp mixture; stir to combine. Remove from heat and stir in basil. Spoon about 1 1/4 cups of orzo-shrimp mixture onto each of six plates and top each with 1 teaspoon of feta.
SHRIMP WITH KEY LIME COCKTAIL SAUCE

Ingredients:
1 pound shrimp, medium, peeled and deveined
1/2 cup ketchup
2 Tbsp fresh lime juice, or Key lime juice
2 tsp Worcestershire sauce
1/2 tsp hot pepper sauce
Instructions:
Rinse the shrimp under cold water and place them in a saucepan with enough cold water to cover them; heat just until the water begins to simmer. Remove the saucepan from the heat and set aside 1 minute, or until the shrimp are opaque in the center. Drain the shrimp, then plunge them into a bowl of ice water. Drain and pat dry with paper towels. Arrange on a serving platter.
To make the cocktail sauce, combine the ketchup, key lime juice, Worcestershire sauce and pepper sauce in a small bowl. Taste and adjust the seasoning, adding more hot pepper sauce or Worcestershire sauce as desired. Serve the shrimp with the cocktail sauce.
