Shannon Pelissero is back after meeting her goal of winning a SPAM cooking contest. She shared her recipe on Pittsburgh Today Live.
Cuban SPAM-wiches
6 Hoagie style rolls
½ cup mayonnaise
½ cup mustard
1 12 oz. can SPAM, classic variety, thinly sliced
12 oz. deli turkey breast, thinly sliced
12 oz. Swiss cheese, thinly sliced
1 cup dill pickle slices
2 T butter, melted
1. Split each roll in half lengthwise and spread each side liberally with mustard and mayonnaise. On each side of the bread, place equal amounts of Swiss cheese, SPAM , turkey and pickles, in that order. Put two pieces of rolls together and brush tops with melted butter.
2. Place each sandwich in a sandwich press heated to medium-high heat. If a sandwich press is unavailable, use a large skillet heated to medium-high heat and use a heavy plate or skillet to press down the top of the sandwich. Cook for 5-8 minutes, keeping sandwiches firmly pressed. Slice diagonally and serve.
Fried Plantains
2 green plantains
Vegetable Oil
Adobo Seasoning
1. Heat the oil to 375 degrees.
2. While the oil is heating up, peel the green plantains and then cut them into 3/4 inch slices.
3. Fry the slices in the hot oil for 3 minutes. They should be a light golden color and semi-soft.
4. Remove the plantain slices with a slotted spoon and drain on paper towels.
5. When the plantain slices are cool enough to handle (about 1 minute), smash them into flat rounds.
6. Fry the rounds in the hot oil for 3 minutes or until they turn crisp and golden brown.
7. Remove with a slotted spoon and drain on paper towels. Sprinkle with Adobo seasoning to taste.
