Heinz Red Zone Recipe: Chili-Rubbed Chicken
PITTSBURGH (KDKA) ―
Each week in the Heinz Red Zone on The PNC Hines Ward Show, Rania Harris puts together some great recipes that are sure to make your tailgating party a hit.
This week, she's making Chili-Rubbed Chicken!
Chili-Rubbed Chicken
Chili rub: ¾ cup chili powder
¼ cup brown sugar
2 teaspoons cayenne pepper
Barbecue table mop: 1 cup Original #7 Jack Daniels Barbecue Sauce
¾ cup Heinz Ketchup
1/3 cup freshly squeezed orange juice
Frank's Red Hot Sauce to taste
DIRECTIONS:
2 - 3 1/2 pound chickens - quartered - backbones discarded
Mix chili powder, brown sugar and cayenne pepper in a small bowl.
Mix Original #7 Jack Daniels Barbecue Sauce along with cup Heinz Ketchup in a small bowl. Add in orange juice and hot pepper sauce.
Arrange chicken in single layer on a large baking sheet. Season with salt and pepper. Sprinkle chili rub generously on both sides of chicken; press to adhere. Let stand at room temperature for one hour.
Heat barbecue to medium high heat. Place chicken, skin side down, on grill rack away from direct heat. Cover grill and cook chicken until cooked through, turning every 5 minutes and covering grill, about 35 to 40 minutes. Chili rub will slightly burned. Serve chicken hot, passing the barbecue table mop separately.
