Rania's Recipes For Summer Entertaining

PITTSBURGH (KDKA) ― Summer is officially here and along with the warmer temperatures comes family cookouts, backyard barbeques and outdoor entertaining.

From her mint marinated grilled shrimp and couscous salad to a fruity iced tea to wash it all down, Rania Harris is sharing some savory summertime recipes to help make your backyard party a big success!


MINT MARINATED GRILLED SHRIMP WITH COUSCOUS SALAD

1 ½ cups water
Splash extra-virgin olive oil
1 cup uncooked couscous
1 cup cherry tomatoes, halved lengthwise
½ cup sliced green onions
½ cup pitted and sliced Kalamata olives
5 tablespoons chopped fresh mint leaves
4 ounces feta cheese, crumbled
Dressing, recipe follows

Directions

In a medium saucepan, bring the water with a splash of extra virgin olive oil to a boil. Stir in the couscous. Remove from heat, cover, and let stand for 2 minutes. Uncover and fluff with a fork. Add remaining ingredients and toss with dressing. Transfer the salad to a platter and top with the grilled shrimp.
Garnish with mint leaves.

Dressing:

¼ cup extra-virgin olive oil
¼ cup freshly squeezed lemon juice
Sea salt and freshly ground black pepper to taste

Whisk all ingredients in a small bowl and set aside.

Grilled shrimp:

¼ cup fresh lemon juice
3 tablespoons chopped fresh mint
¼ cup canola oil
1/4 teaspoon ground black pepper
1 pound shrimp (20 to 24 size), shelled and deveined
Salt

Directions:

Combine juice, mint, oil and pepper in a blender and blend until smooth. Place shrimp in a bowl, pour marinade over and stir to coat evenly in the marinade. Marinate for 10 minutes.

Heat grill to high. Season shrimp with salt and grill for 1 to 2 minutes per side or until slightly charred and just cooked through.



FRUITY ICED TEA

4 cups unsweetened iced tea
¼ cup grenadine syrup (or to taste)
Sliced oranges
Sliced lemons
Sliced Granny Smith apples
Cherries
Ice, for serving

Directions

In a large pitcher, mix together the tea and grenadine. Add in the fruit.
Pour over ice when ready to serve.

Serves: 4
