Market District Recipes: Skewers & Grilled Filet

PITTSBURGH (KDKA) ― If you're planning a Fourth of July picnic, Market District Chef Scott Popovic has some recipes that are sure to make your party a success!  Chef Scott suggests adding some sizzling skewers and mixing up a filet watermelon salad!

MOJO SKEWERS

Ingredients
• 1 1/2 pounds Certified Angus Beef ® top sirloin steak, cut into 1/4-inch thick slices
• 1 1/2 cups fresh orange juice
• 1/3 cup fresh lime juice
• 1/3 cup olive oil
• 1/4 cup minced fresh parsley
• 2 garlic cloves, chopped
• 1 tablespoon chopped fresh mint
• 1 tablespoon chopped oregano
• 1 teaspoon ground ginger
• 2 teaspoons salt

Instructions
1. Combine all ingredients except steaks in a blender and pulse to form a smooth mixture.

2. Place steaks and two-thirds of mojo in a zipper-locking plastic bag. Marinate 30 minutes in refrigerator, turning occasionally.

3. Thread marinated beef onto skewers; discard used marinade. Grill skewers over high heat about 3 minutes or until just browned. Serve immediately with reserved mojo on the side.

Serves 4



GRILLED FILET WITH WATERMELON & BIBB SALAD

Ingredients
• 4 (6 ounce) Certified Angus Beef ® filet steaks
• 4 cups watermelon cubes
• 1 head Bibb lettuce, cleaned
• 1/2 serrano chile, diced small
• 4 tablespoons herb and balsamic vinaigrette prepared dressing
• Salt and pepper to taste

Instructions
1. Season filets and grill over medium-high heat until they reach desired "doneness." Remove from heat and allow to rest.

2. For salad, combine remaining ingredients together in a mixing bowl.

Serves 4
