Cinnamon Coffee Cake Recipe

PITTSBURGH (KDKA) ― Stacey A. Harris the Diabetic Pastry Chef stopped by Pittsburgh Today Live to show off her delicious Coffee Cake.

Cinnamon Coffee Cake


Ingredients:

1 cup white all-purpose flour
1/2 cup oat flour
1/2 cup white whole wheat flour
2 1/2 tsp baking powder
3/4 tsp salt
2/3 cup sugar (or Splenda)
2 eggs (or egg substitute)
1 cup milk (1% or 2%)
4 tbsp trans-fat-free shortening

Topping:

1/4 cup sugar (or Splenda)
1 tsp cinnamon
1 tbsp white all-purpose flour
1/4 cup melted butter (or reduced calorie margarine)

Directions

In large mixing bowl, sift together dry ingredients for coffeecake. Add wet ingredients and beat with electric mixer until smooth. Spread batter into a greased 8- or 9-inch square pan.

Mix dry topping ingredients together and sprinkle on top of batter. Drizzle with butter. Bake 35 to 40 minutes, or until toothpick inserted in center comes out clean. Cut into squares and serve warm with butter.
